WILLIAMS – CHRISTMAS PEAR BRANDY

Williams is very demanding in terms of climate and location. Ripening at the end of August, it is very popular and sought after by many connoisseurs as a dessert pear or refined as a brandy and is known worldwide. Its distinctive aroma and juicy, melt-in-the-mouth flesh make it a popular table pear for fresh consumption and, even when stored in cold storage, it only has a short shelf life of around three weeks. The aroma can often vary greatly depending on the degree of ripeness and location. Only first-class Williams pears that have been stored until they are fully ripe produce a pear aroma that is reminiscent of a sweet pear – a fine Williams brandy. Precise work during fermentation and distillation as well as a great deal of sensitivity in the maturation of the brandy are required of the distiller.
